Opening Tasks

*Prioritize pretzels so they are out by 7:30am (some folks come early for those)
  • Blacksburg Market? was yesterday, so there may be bagels varieties that are not stocked on shop shelves. Pull from bagel Narnia?, and bag what's needed to stock display. 3ct packs in Narrow bags.
  • The restaurants that get orders Thursdays are Pub?, and Rising Silo?, Milk Parlor?. Check business phone text messages for new orders, write the ordered numbers on the clipboard, and prep enough bins for the orders.
  • Text Gage and see if he can run deliveries for the day. Let him know what time you aim to be done packing so he can show up then!
  • Pull old Hoagies + Bun buns from shop shelves to pack into restaurant orders. Restock the shelves with our fresh bread!
  • Once buns and hoagies come out of the oven and are cooled enough to handle, move onto wire racks. Once cool (below 80 degrees), pack as per orders.
  • Restaurant orders: Bun buns? go in heavy bags as dozens. Hoagies? are in heavy bags as 8ct. Do not stack soft bread, the only exception should be if it's about to be delivered.
  • Retail(labeled) packs: Bun buns go in Wide bags, 6ct. Hoagies go in Narrow bags, 4 ct. Hot dog buns go in Narrow bags, 8 ct, with Hoagie labels(because same ingredients). Stock at least two of each on shop shelves. Pack any leftover in heavy bags, and freeze or store in Overflow? bins.
  • Pack any extra bread loaves from market bins into heavy bags to keep them fresh. Store in overflow bins or freeze.
  • Loaves will be coming out of the oven after the buns and hoagies. As soon as you can handle them, move them onto wire shelves. This prevents them from getting soggy bottoms.
The pans then need to be brushed off and stacked back in their original places.
  • Around 3, Babka? comes out of the oven. Push babkas! Let folks know it's fresh out the oven when they're shopping!! Once cool, bag them up with labels. Stock the shop shelves and store the backstock on the bottom shelf of Narnia?.
